High in the Mountains of Southern Mexico. Organically Grown. Perfectly Roasted.

Grown in the highlands of Chiapas in the volcanic soil of Mexico's Sierra Madre — Mexico's southernmost state, known for its cloud forests, volcanic soil, and small Indigenous farming cooperatives — this organic coffee is a product of terroir and tradition. High elevation slows the ripening of each cherry, giving the beans time to develop a naturally smooth body and a bright, wine-like acidity that Chiapas is prized for.

Sourced from smallholder co-ops at 900–1,700m elevation, shade-grown and organic. Harvested November–March for peak freshness.

Our medium roast strikes the perfect balance: dark enough to bring out rich caramelization, light enough to preserve the bean's natural character. The result is a clean, comforting cup with just the right amount of complexity.
